Summer is a great time to enjoy lighter, healthier meals. When the weather is warm, you don't want to be weighed down by a heavy meal.

Instead, try these four healthy and delicious dinner ideas perfect for a light, satisfying dinner, making the most of all those delectable summer flavours.

1. GRILLED SALMON WITH LEMON AND HERBS

Grilled salmon is a light and flavourful dish that's perfect for summer (and packed with Omega oils and loads of other nutrients and minerals. The lemon and herbs add a touch of brightness, and the salmon is a good source of protein.

To make, simply brush salmon fillets with olive oil, season with salt and pepper, and grill (OR BBQ) for 6-8 minutes per side or until cooked through.

Ingredients:

  • 1 pack of salmon fillets
  • 2 tablespoons olive oil
  • 1 lemon, zested and juiced
  • 1 tablespoon chopped fresh herbs, such as thyme, rosemary, or dill
  • Salt and pepper to taste

2. CHICKEN KEBABS WITH VEGETABLES

Chicken kebabs are another excellent option for a light and healthy summer dinner. Marinate the chicken with a delicious blend of herbs and spices, and add some vegetables for extra freshness (and extra nutrition).

To make, cut chicken breast or thighs into cubes, combine with your favourite marinade, and skewer with vegetables such as peppers, onions, and courgettes. Grill the kebabs for 10-12 minutes or until the chicken is cooked through.

Ingredients:

  • 500g boneless, skinless chicken breasts or thighs cut into cubes
  • 1 tablespoon olive oil
  • 1/2 cup chopped onion
  • 1 red pepper, chopped
  • 1 green pepper, chopped
  • 1 courgette, sliced
  • Barbecue sauce, soy sauce, mustard or any other marinade
  • Salt and pepper to taste

3. WATERMELON AND FETA SALAD WITH MINT:

A summer salad is a great healthy option for dinner, and this recipe adds some often-overlooked ingredients for a light, super refreshing dish. It's perfect as a main course or a side dish at summer parties.

Whip it together in minutes by combining watermelon cubes, feta cheese, torn mint leaves, and sliced red onions. Then drizzle with olive oil and balsamic glaze, seasoned with salt and pepper, for a well-balanced taste.

Ingredients:

  • ½ a seedless watermelon
  • 250g cup crumbled feta cheese
  • Fresh mint leaves, torn
  • 75g sliced red onions (optional)
  • Extra virgin olive oil
  • Balsamic glaze
  • Salt and pepper to taste

4. GRILLED SHRIMP WITH MANGO SALSA

Dial up the summer holiday vibes with this tasty recipe that's easy to make and tastes incredible. The grilled shrimp adds a touch of protein, and the mango salsa is packed with refreshing flavour.

Toss the shrimp with olive oil, paprika, garlic powder, salt, and pepper, and then thread it onto skewers. Grill for 2-3 minutes on each side until they turn pink and opaque. In a separate bowl, combine the diced mango, red pepper, red onion, coriander, lime juice, and salt to make the mango salsa. Dollop it on the skewers and enjoy.

Ingredients:

  • 500g large shrimp, peeled and deveined
  • 1 tablespoon olive oil
  • 1 teaspoon paprika
  • 1 teaspoon garlic powder
  • Salt and pepper to taste
  • For the mango salsa:
    • 1 ripe mango, diced
    • 1/2 red pepper, diced
    • 1/2 red onion, finely chopped
    • Fresh coriander, chopped
    • Juice of 1 lime
